Two Salmon Tartar

A combination of fresh raw salmon and silky smooth smoked salmon provides a taste sensation not soon to be forgotten …

  • 2 tbsp regular or light mayonnaise (25 mL)
  • 1 tbsp lemon juice (15 mL)
  • ½ tsp capers, chopped (2 mL)
  • ¼ tsp pepper (1 mL)
  • Dash hot pepper sauce
  • Pinch hot pepper flakes
  • ¼ lb fresh salmon fillet (125 g)
  • ¼ lb smoked salmon (125 g)
  • Fresh dill

In a bowl, combine mayonnaise, lemon juice, capers, pepper, hot pepper sauce and hot pepper flakes. Finely chop the fresh and smoked salmon. Gently mix into mayonnaise mixture. Serve on crackers or breads. Garnish with sprigs of fresh dill.

Makes about 1 cup (250 mL).
